Tomato Rice Recipe
Tomato rice is spicy and tangy rice in which tomatoes are used as one of the main ingredients. It is a famous South Indian Delicacy. In Tamil language it is known as Thakkali Sadam.
This rice is special for one more reason. The tomatoes and capsicum which I used in this recipe were gifted by my friend Rupali from her home garden. This is the 1st time that I have used home grown tomatoes in any recipe and trust me you can make out the difference in the final dish.
Tomato Rice can be a great lunch item and is enjoyed with some ghee and papad.
Ingredients
2 cups rice
3 tbsp oil
1 tsp cumin seeds
2-3 bay leaf
1 onion large sliced
1 large capsicum sliced
salt as per taste
Grind into a paste
6 tomatoes
1 inch ginger
2-3 garlic pods
4 tbsp desiccated coconut
1 tsp black peppercorns
2-3 cloves
1 inch cinnamon
2-3 green chillies
Method
Rinse and soak rice for 3o mins
Grind into a paste the ingredients mentioned under the same above
In a pan, heat oil
Add cumin seeds and bay leaf
Now add onions and capsicum. Sauté well until onions become translucent
Add the tomato paste and let it cook for 10 mins
Finally add some 2 -3 cups of water, rice and salt. Mix well and let it cook
Serve it hot with ghee and papad
