Bread & Potato Roll Recipe
Bread & Potato Roll is a great appetiser made from potato onion vegetable stuffed with cheese and rolled in flattened bread. It is shallow fried. It can be a tasty breakfast dish and goes perfect with chai on the side. It is actually a modern version of vada pav 🙂 You can read the vada pav recipe here
Due to lockdown all my favorite chefs are posting their recipes on Instagram TV. This recipe was shared by Chef Mani of San Francisco’s August1Five restaurant. His recipes require simple ingredients and are easy to follow. I love this August1Five and had once written a review about it. You can read it here
4 potatoes boiled and mashed
1 big onions chopped
4 green chilled finely chopped
some coriander chopped
a pinch of asafoetida
4 tbsp oil
1 tsp turmeric powder
1 tsp cumin seeds
1 tsp mustard seeds
salt as per taste
8 sliced of bread with sides removed
2 cheese cubes sliced vertically
Water as required
In a pan, heat oil and add asafoetida.
Add cumin seeds and mustard seeds. Let them splutter.
Now add turmeric powder, chopped onions, coriander leaves, chillies and salt. Cook until onions are translucent.
Now add smashed potatoes and mix well. Cook for 5 minutes. Remove the mixture from the pan in a plate.
Take a slice of bread. Flatten it with a rolling pin. Add a 2 tbsp of potato mixer. Place a cube of cheese on top of it. Apply water to the side of the bread. Roll the bread and seal it well at the end.
Heat oil in the pan. Add the roll to the pan facing the sealed side downwards. Shallow fry it until crispy.
Serve it with some tomato ketchup and hot tea.
