Eggless and Butterless Mango Cardamom Cupcakes Recipe & Mini Cooper Celebrations!
Amazingly easy and delicious cupcakes made with the goodness of mango and cardamom are perfect dessert for this summer. This recipe was shared by my professional baker friend Elizabeth Priya Samuel of CakedbyLiz on our Crave Cook Click Facebook Group.
I have become a big fan of eggless and butterless baking as you can enjoy the baked goods feeling a bit less guilty 🙂
I made these cupcakes for a special occasion which was to celebrate my new car Mini Cooper. All my close friends know how much I hate driving..yeah seriously. Being a Mumbaite and an avid local transport lover I was never a fan of driving my own car.
I found innumerable excuses to avoid driving here until I found this car which I love driving. So now I have started driving not because I love driving but becoz I love driving my MINI 🙂
It is totally chic and sturdy at the same time 🙂
I love my MINI so much now that I do not miss any fun facts about it and here are some from The Guardian:
1.Issigonis’s first design sketch for the Mini was drawn on a napkin in Switzerland.
2.In 1961, racing driver Stirling Moss was banned for a year for speeding in a Mini, allegedly while testing it for a Sunday paper.
3.In 1964, BMC tested a 2.3-litre Mini with engines at both ends. It was so fast development was dropped.
4.Rumour has it Issigonis designed the door bins in the original Mini to hold a bottle of gin and several tonics. Or maybe it was just pints of milk.
5.How many people can you fit in a Mini? The record is 66, apparently.
6.Longest Mini convoy? 269 cars.
7.Joanne Westlake was the fi rst person to be born in a Mini.
8.Actor Kevin Spacey once paid $130,000 for the last classic Mini Cooper to be built.
9.Most famous death in a Mini? Marc Bolan of T Rex, who was in a crash in a 1275 GT.
10 .The breathtaking escape through the Turin sewers by gold bar-filled Mini Coopers in The Italian Job was filmed in Coventry.
And now here is the celebration Mango Cardamom Cupcake recipe 🙂
Mango Pulp – 1 1/2 cups (All Purpose Flour/Maida – 1 1/2 cups
Baking Powder – 1 1/2 tsp
Baking Soda – 1/2 tsp
Salt – 1/4 tsp
Cardamom pwd – 1/2-1 tsp (this is the key to the kulfi flavor)
Oil – 1/3 cup (I substitute oil with equal portion of melted n cooled unsalted butter)
Granulated Sugar – 2/3 – 3/4 cup (depending on how sweet the mango pulp is)
Vanilla Essence – 1 tsp
For Fresh Cream Frosting
1 cup Heavy Cream (cold)
2 tablespoons of Sugar (or Powdered Sugar)
Optional: 1/2 teaspoon of Pure Vanilla (clear for pure white color)
Preheat oven to 350*F.
Sieve Flour, Baking powder and baking soda, salt and cardamom.
Whisk all the other ingredients, add the flour mixture gradually and mix to make a smooth batter.
Pour this into a cupcake liners, you can add nuts to the batter if you like a crunch.
Bake for 22-27 mins or until a toothpick inserted in the center comes out clean.
Let them cook before adding the frosting on the top.
Fresh Cream Frosting Method
Add all the ingredients in a mixer.
Start on a low speed to incorporate all the ingredients together then whip on high until you have peaks.
Keep checking the stiffness of your whipped cream because you can get it to different levels. Voila! That’s it!
Put the frosting in the icing bag and add the frosting to the cupcakes.
