As a kid, Mom used to always give me usal chapati in tiffin for lunch and I loved it since then. It was crunchy and spicy.
Moog Matki Usal
1 cup sprouted moog
1 cup sprouted matki
1 onion chopped
1 tomato chopped
1 inch ginger grated
4-5 green chillies
4 curry leaves
1 tsp mustard seeds
1/2 tsp asafoetida
1 tsp turmeric
1 tsp red chilli powder
1 tbsp garam masala
2 tbsp oil
Salt to taste
Grated coconut to garnish
Heat oil in wok.
Add mustard seeds and asafoetida .
Add curry leaves, chillies and turmeric.
Now add the chopped onions and grated ginger.
Fry onions till translucent, tender and brown on edges.
Add chopped tomatoes, turmeric powder and chilli powder.
Saute it for 10 minutes and let it cook. Now add sprouted matki and moog, cilantro and salt and allow it to cook for a few minutes.
Add 2 cups of water and garam masala. Let it boil for 10 minutes.
Garnish with grated coconut and serve hot with chapatis
