Kurmura Chiwda Recipe- Diwali Delicacy
Kurmura Chiwda is a spicy puffed rice made during Diwali in Indian Households. Kurmura means puffed rice in Marathi language. The basic Diwali snacks consist of Chakali, Karanji, Ladoo and Chiwda. I already made Chakali and Karanji 🙂
The best part about this Chiwda is prepared in an hour and remains crunchy and crispy for many days provided you store it in an air tight container.
Every year I make different varieties of Chiwda. I had made Corn Chiwda, Poha Chiwda and Bhadang in the past. This time it was Kurmura Chiwda’s turn.
Ingredients
Puffed Rice – 10 cups
Sugar – 1 tsp
Turmeric powder – 1/4 tsp
Salt to taste
Oil – 4 to 5 tbsps
To fry
Roasted peanuts – 1 cup
Cashew nuts – 1/2 cup, broken into pieces
Roasted chickpeas – 1/2cup
Dried coconut – 1/2 cup, grated
Green chilies – 10
Curry leaves – 2 sprigs
Slice garlic 10 pods
Raisins 1/4 cup
Oil for frying
Method
Fry all the items mentioned under to fry one by one
In a deep pan, heat oil. Add turmeric, salt and sugar
Mix all the fried items and cook for 5 mins
Finally add puffed rice and mix well.
Roast on low flame for 2 mins. Keep mixing through out. Turn off flame and allow to come to room temperature.
Store in an air tight container.
