Eggless & Butterless Pineapple Sponge Cake Recipe
Eggless & Butterless Pineapple sponge cake with cream and chopped pineapple. This is made within one hour and can be a perfect gift for your best friend’s birthday 🙂 I have made fresh cream icing cupcakes but never made a full fledge cake with fresh cream icing. Tried this for the first time and it came out delicious.
I always ran away from baking as I never liked using so much butter and didn’t like the smell of egg. But nowadays I try eggless and butterless cake recipes and they turn out to be great. My in laws are visitng and my father in law loves cakes and pasteries which motivates me to try different type of pasteries, cakes and cupcakes 🙂 The deal is my mother in law makes dinner and I make sweet/dessert 🙂

Ingredients
For the cake
2 cups flour
2 1/2 tsp baking powder
1/2 cup oil
1 1/2 cups sugar – powdered
1/2 water
3/4 cup yogurt
1 tsp vanilla essence
1/4 tsp salt
2×9 inch round or square cake tins
For layering
1 cup pineapples – chopped fine
3 Tbsp pineapple juice/syrup
3 cups cream-chilled
1/4 cup sugar
Cherries and pineapple slices for garnish
Method
In bowl add flour add all ingredients mentioned under for the cake and blend well.
Transfer to the baking tin and bake for 25 minutes at 350 degrees.
Once it is done, remove it from the oven and let it cool.
Meanwhile to make icing, in a bowl add cream and sugar. Whip the cream until you see soft peaks.
After making sure that the cake is completely cooled down, slice the cake in two halves.
On bottom layer, add pineapples, drizzle pineapple juice and spread the cream.
Place another layer on it and repeat the process.
Now cover neatly with a layer of cream.
Garnish with the pineapple slice and cherries, chill and serve.
