Whole Wheat Eggless Banana Oat Muffins Recipe
Perfectly healthy sugarless , butterless and eggless muffins made from whole wheat flour, banana and oats.
It has started raining here and trust me I am not a big fan of rain. I love sunny weather, I know I am bit pampered due to California weather. Coming back from work i decided that i have to bake something to get over this dull weather. Baking/cooking works as a therapy for me 🙂
So decided to bake muffins and that too wanted an healthy ones. So googled as I am not great at coming up with innovative baked goods.
And why muffins? Because 2 days back i made cranberry orange muffins on thanksgiving and they turned out awesome. So wanted to try out healthy muffins this time. This recipe has no eggs, no sugar, no flour and no butter. Too good to be true huh 🙂 But it’s true and they are awesomely tasty too 🙂 Thanks to Eat Live Run Blog for this great recipe.
Whole Wheat Eggless Banana Oat Muffins Recipe
makes 10-12 muffins

Ingredients:
1 1/4 cup whole wheat flour
3/4 cup old fashioned oats
1 tsp baking soda
1/4 tsp salt
1/2 cup maple syrup
1/2 cup vegetable oil
3 bananas, mashed
1/ 2 cup peach syrup
1/2 tsp cinnamon
Directions:
Preheat oven to 350 degrees.
Whisk together the flour, oats, baking soda, salt, and cinnamon in a large bowl. In another bowl, blend together the maple syrup, oil, peach syrup and mashed bananas.
Add wet ingredients to dry and stir only until combined
Fill greased muffin tins 90% of the way full with batter. Bake for 25-30 minutes until golden. Serve warm.
