Thanksgiving Dinner 2014 Recipes
Today Thanksgiving is celebrated throughout US and it’s a tradition to roast turkey on this occasion. I am not a great fan of Turkey so i decided to make an impromptu dinner consisting of grilled chicken, cheese chill dinner puff pastry, sautéed potatoes with herbs and cranberry orange muffins. I know sounds a lot but trust me everything was done in 1.5 hrs.
Grilled Chicken Recipe
Ingredients
1 lb chicken thigh
2 tbsp ground black pepper
2 tbsp creole sesasoning
2 tbsp red chilli powder
1 tbsp oil
Method
Mix everything together and broil for 30 minutes.
Cheese Chilli Puff Pastry Recipe
Ingredients
2 puff pastries
1/2 cup grated mozzarella cheese
2 tbsp red chilli flakes
Method
Sprinkle cheese and red chill flakes on the puff pastry. Seal it and bake for 30 minutes at 400 degrees
Sauteed Potatoes Recipe
Ingredients
3 small potatoes
2 tbsp kasuri methi (dried fenugreek leaves)
2 tbsp ground black pepper
salt as per taste
Method
Slice potatoes. Mix other ingredients with the potatoes slices and bake for 20 minutes ta 400 degrees
Cranberry Orange Muffin Recipe (Adapted from food.com)
Ingredients
2 cups flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cranberries
1 egg
3/4 cup orange juice or peach syrup
1/4 cup vegetable oil
1 teaspoon grated orange rind
Method
Combine dry ingredients.
Stir in cranberries.
Beat egg, orange juice, oil and orange rind.
Add to dry ingredients all at once.
Stir just to moisten.
Spoon into greased muffin cups. (fill 3/4 full).
Spring tops lightly with a bit of sugar.
Bake 400F 15-20 mins till lightly browned and firm to the touch
