Soft and fluffy sponge cake made with readily available ingredients at home. I love this sponge cake so much that I have been baking it almost every week for last one month. Goes perfectly with a nice cup of coffee. Even my toddler loves it.
1 cup maida/all purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup sugar
1/2 cup oil
1 tsp vanilla essence
Grease a baking tin with oil
Sieve all purpose flour, baking powder and salt together. Keep it aside
In a bowl beat eggs for 2 mins
Add sugar and beat until the mixture turns fluffy and light yellow in color.
Now add half of all purpose flour mixture and beat once
Add remaining flour and beat again.
Add oil and vanilla essence and beat one last time.
Transfer to the baking tin and bake on low gas for an hour.
