Banana Pressure Cooker Cake Recipe
I love the outcome of the banana cake which I baked in the pressure cooker so thought of sharing the recipe and technique with my readers. It came out so fluffy and was perfectly baked. I was quite stunned. I would have never imagined baking stuff without an oven. I guess ” Where There’s A Will There’s a Way.
So far I love my move to India but obviously I miss certain things about US. Like for example my cooking range. I have moved into our apartment in Mumbai where we were supposed to get a full fledged cooking range but due to the lockdown I don’t know when that will take place. Cooking and Baking has been keeping my mind sane. But with limited resources it has been challenging. I have been trying to bake anything and everything either in my convention microwave or in the pressure cooker.Banana cake is my 1st recipe in the pressure cooker.
Here is the recipe:
1.5 cups all purpose flour
1/2 cup sugar
1/2 tsp salt
1 tsp baking powder
1/2 cup oil
1 tsp vanilla essence
4 ripe bananas mashed
In a bowl whisk the eggs along with salt until fluffy. Add sugar and oil one by one to the mixture and blend it well.
Add mashed bananas and essence to the above mixture. Blend one more time.
Now sieve the flour and baking powder to the above mixture. Blend one more time.
Apply oil to the baking tin or steel cooker tin. Add the cake mixture to it.
Take a pressure cooker. Add 2 cups of salt to the cooker.Remove the whistle of the lid. Close the lid of the cooker and preheat for 10 minutes on high flame.
Place a small steel plate on top of the salt in the cooker. Keep the baking tin on top it. Bake on slow flame for 60 mins. Check after an hour if the cake is baked properly by inserting a tooth pick.
Remove it from the pressure cooker and let it cool for 20 minutes. Serve it with a cup of tea 🙂 Here is my recipe of a perfect homemade chai 🙂
You can also add chocolate chips to the batter if you like.
