Pithla Bhakri Thecha Recipe
Pithla is made from besan/chickpea flour and tastes best when eaten with Bhakri which is prepared using Jowar/Bajri flour. On the side the lal thecha, hirva thecha and shengdana kut add the extra zing to the entire dish:)
Pithla Bhakri represents a humble and very comfort meal in any Maharashtrain household. Pithla, Bhakri and Thecha served with Green chillies and raw onion make a fabulous combination.Pithla Bhakri is called as Farmer’s meal or poor man’s meal in Maharashtra. But because of it’s awesome taste and simplicity it got popular among all Maharashtrian households.

Pithla Recipe
Ingredients:-
2 cup besan
5 cups water
1 tsp cumin seeds
1 tsp mustard seeds
Curry leaves
Pinch of asafetida
1 tsp turmeric powder
2 onions chopped
Green thecha (recipe is given below)
4-5 green chilies chopped
Oil
Salt as per taste
Method
Heat oil in pan / kadai.
Add mustard seeds, turmeric , hing, and cumin seeds. Wait till they splutter and then add green chillies, onions and curry leaves. Fry till they become translucent. Now add green chilli thecha and cook for 5 minutes.
Add water and let it boil.
In a bowl mix besan with some water. Now add the besan to the pan. Make sure no lumps are left.
Add salt as required and keep stirring at intervals (Continuous stirring will avoid formation of lumps).
Add Coriander leave
Cook for 5-10 mins

Ingredients
1 cup jowar (white millet) flour
1 cup bajri flower
4 tbsp rice flour
salt to taste
Method
Combine the jowar flour, bajri flour and salt in a bowl, mix well and knead into a smooth stiff dough, using enough hot water.
Divide the dough into 3-4 equal portions.
Roll out each portion, using little flour for rolling into a circle of 5″ diameter to make a semi-thick roti.
Heat a tava and cook the bhakri applying little water to the upper surface and spread it all over with the help of your fingers.
Cook the bhakri on other side and when the water evaporates, cook for a minute
Now roast the bhakri on direct flame from both the sides.
Serve hot with Pithla

Ingredients:
8-9 green chillies, de-stemmed and washed.
2 tbsp cumin seeds
Handful coriander leaves
8-9 cloves garlic peeled
Salt as per taste
1 tsp Oil
Method
Roughly grind all the above ingredients together
Red Thecha ( Lal Mirchi Thecha)
Ingredients:
5 red chillies (not dried ones but fresh ones)
2 tbsp desiccated dry coconut
4 garlic pods
1 tbsp red chilli powder
Salt as per taste
Method
Roughly grind all the above ingredients together.
Peanuts Chutney (Shengdana kut)
Ingredients:
½ cup peanuts
2 tbsp red chilli powder
Salt as per taste
Method
Dry roast the peanuts.
Let them cool. In a grinder, mix peanuts, chilli powder and salt and grind well.
