Multigrain Crepes/Dosa which is made from all organic flours and vegetables is a healthy meal accompanied with rich dry fruit melody made from high in iron dryfruits.
Cancer Institute Foundation (CIF) organized the Kitchen Khiladi Contest 2013 which was a huge success with participants from all over the bay area, esteemed judges, CIF volunteers and amazing audience.

Multigrain Crepes/ Dosa & Dry Fruit Melody Recipe
Ingredients
Dosa/Crepes Batter
1/2 cup of rawa
1/2 cup of organic quinoa flour
1/2 cup of organic brown rice flour
1/2 cup of organic soybean flour
Salt to taste
1/4 cup of yogurt
3 cups of water
1/2 tsp of cumin seeds
1 tsp green chili & ginger paste
Dosa/Crepes Stuffing
1 cup quinoa
2 cups vegetable stock
1 cup sprouted moong
1/2 cup red bell pepper
1/2 cup green bell pepper
1/2 cup yellow bell pepper
1 carrot shredded
1/4 cup asparagus finely sliced
4 broccoli florets
1/2 cup onion
Green chilies to taste
Ginger to taste
Salt to taste
Chutney
2 small chayotes
1-2 cloves of garlic
¼ cup of chopped onions
Green chilies to taste
Ginger to taste
Cilantro to taste
Salt to taste
Directions
1) Mix the ingredients for the batter together and let it ferment for 6 hours.
2) Cook the quinoa in 2 cups of vegetable broth.
3) Sautee the onions and add all the chopped vegetables.
4) Sautee the vegetables for 3-4 minutes.
5) Heat tawa on medium heat and spread the batter on top.
6) Let it crisp up on one side or until the color is golden brown, and then flip it.
7) In a small pan, add 1 tablespoon of oil and sautee the chayote, garlic, onion, chilles, and ginger for 5 minutes.
8) Put the mixture into blender and grind it into a coarse paste and add tadak to it.
9) Add the stuffing and roll the dosa. Serve hot with the chutney.
Dryfruit Melody
Ingredients:
2 cups chopped dates
1/4 cup chopped figs
1 tbsp chopped pista
1 tbsp chopped almonds
1 tbsp chopped walnut
1/4 cup shredded dried coconut
1/2 cup powdered coconut for decoration
3 tbsp ghee
1/4 cup oatmeal
1 tsp ginger powder
1 tbsp honey
Instructions
1) Heat 1 tbsp of ghee in a pan. Sauté dates for two minutes at medium heat. Empty it in another plate.
2) Heat 1 tsp of ghee in the pan, and sauté figs for 1 minute on medium heat, and empty it in plate.
3) Heat 1 tsp of ghee and sauté walnut, almonds, and pista for about two minutes on medium hear and empty it in the plate.
4) Heat 1 tbsp of ghee and cook oatmeal for about 3-4 minutes until golden brown. Empty it in the plate.
5) Dry sauté the coconut in the pan.
6) Grind/pulse the figs in a food processor. Add dates and grind/pulse them too. Remove them from the food processor.
7) Mix in pista, almond, walnut, coconut, oatmeal, ginger powder, and mix everything together.
8) Divide the mixture in small portions and roll them in small flat balls.
9) Roll the balls in powdered coconut for decoration and enjoy!
