Masale Bhat Recipe
Masale bhat is an authentic maharastrian rice delicacy made with homemade ground masalas and vegetables cooked with rice. It is generally served with Matha which is a spiced buttermilk. My aai is visiting me and she made this delicacy for lunch today.
A maharashtrian wedding is never complete without the masala bhat on the wedding menu. Goda masala is also important in preparation of masale bhat which is easily available in indian grocery stores.
Apart from masale bhat, vangi bhat and phodnicha bhat are also famous Maharashtrian rice delicacies.
Masale Bhat Recipe
Ingredients
1 cup rice
1 carrot chopped
1 cup peas
15 cashews
5 green chillies finely chopped
chopped coriander leaves
1/2 cup shredded coconut
1 spring of curry leaves
1 tbsp goda masala
1/2 tbsp chilli powder
salt as per taste
2 tbsp Oil
1 tbsp ghee
1 tsp mustard seeds
1 tsp turmeric powder
1 pinch asafetida
For masala
1 tbsp coriander seeds
4 cloves
1 piece of cinnamon
1/2 tbsp shahi jeera
Method
Grind the ingredients mentioned for masala and keep it aside
In a pan add oil and ghee. let it heat
Add mustard seeds, asafetida, curry leave, green chillies, peas, chopped carrots, cashews, salt, ground masala, chilli powder, turmeric powder, coriander leaves and goda masala. Saute for 2-3 minutes
Add rice and mix well for 5 minutes
Add 2 cups of water
Pressure cook it for 3 whistles
Once done drizzle some ghee on top and mix well
Garnish with shredded coconut and coriander leaves
Matha
Matha is sweet and spicy butter milk and is served with masala bhat. It serves as a calming agent and balances the spiciness of the masala bhat.
Ingredients
1 green chilli
1 tsp cumin seeds
Some coriander leaves
1 cup yoghurt
1 tbsp crushed ginger juice
salt taste
sugar as per taste
Method
Mix yoghurt with 2 cups of water and make buttermilk. Adjust water as per your requirement
Grind green chilli, cumin seeds, ginger juice and coriander leaves
Add the ground masala to the buttermilk , salt, sugar and mix well
Serve chilled with masale bhat
