I have grown up eating pohe almost once a week as breakfast. Poha is a healthy Maharashtrian snack which is made from flattened rice sautéed with onions and potatoes. It is a very commonly served snack to guests. It is a quick and easy recipe to make and very delicious. It can be made by adding peas, groundnuts, potatoes, etc
There is a very funny story associated with poha. In Maharashtrians whenever a guy comes to see a girl for marriage proposal the ceremony is known as Kande PoheJ. Poha is accompanied with hot chai (tea).This snack is so famous that there is also a Marathi movie named after it. There is one famous song from Marathi movie “Sanai Choughade”
“Aayushya he chulivarlya kadhaitale Kande Pohe…………”
It means: Life is like kande pohe in kadai, which means tasty and colorful.

Kande Pohe Recipe
Ingredients
2 cups thin poha (flattened rice)
2 tbsp oil
2 potatoes diced
1 big onion chopped
3-4 curry leaves
1 tbsp mustard seeds
a pinch of asafetida
4 green chillies chopped
1 tsp turmeric powder
1 tbsp salt
1 tbsp lemon juice
Salt as per taste
Chopped coriander leaves for garnishing

Method
Soak poha in water. After 5 minutes drain the water and keep it aside.
Heat oil in a pan.
Add mustard seeds, asafetida and curry leaves.
Add chopped onions and sauté till they become translucent.
Now add potatoes, chillies and turmeric powder.
Cover the pan and let the potatoes cook.
After 10 minutes add the soaked poha.
Add salt and sugar to it.
If you feel that the poha seems to be bit dry you can sprinkle some water from top.
Let it cook for 5 minutes.
Add lemon juice and mix everything well.
Sprinkle coriander leaves and serve it hot with a slice of lemon.
