Indian Egg Rice Recipe
Indian egg rice made with parboiled rice, spring onions, boiled eggs, lots of ginger garlic and garam masala can be a great dinner recipe. This is not a typical chinese egg rice but it’s an indian version of the egg rice. It was made by my Mother in Law for dinner tonight. She didn’t only cook it but also did the styling for the plate..love the way she carved the tomato and sliced the eggs:)
Here is the quick recipe
Ingredients
2 cups boiled rice
4 eggs boiled and sliced
1 tbsp ginger grated
2 tbsp garlic chopped finally
4 spring onions chopped finely
2 tomatoes chopped
1 cup chopped coriander leaves
2-3 green chillies chopped
1 tbsp chilli flakes
1 tsp black pepper powder
1 tbsp garam masala
pinch of asafetida
salt as per taste
oil
Method
Heat oil. Add garlic.
Then add asafetida, tomatoes, green chillies, onions, coriander leaves, ginger, chillies flakes and black pepper. Mix well and cook for 10 minutes
Add sliced eggs and garam masala. Mix lightly
Finally add rice, salt and mix everything well
Garnish with sliced spring onions and serve hot
