Aloo Baingan Sabzi Recipe
Aloo Baingan is made with brinjals/eggplant and potatoes sautéed in onion tomato gravy. It’s a simple day to day vegetable but is really yummy. I generally have it with roti or as a side with dal rice.
Ingredients
5 brinjals chopped
2 potatoes chopped
1 onion finely chopped
1 tomato finely chopped
4-5 green chilled chopped
1 tbsp cumin seeds
5 garlics chopped
1 tbsp red chilli powder
1 tbsp garam masala
2 tbsp cumin and coriander powder
Oil
Salt as per taste
Coriander leaves for garnishing
Method
In a pan heat oil.
Add chopped garlic and sautee till it is brown.
Add cumin seeds and let them splutter.
Add chopped onions and chillies
Once the onions are translucent, add all dry masalas (red chilli powder, cumin coriander powder and garam masala)
Sautee for 10 minutes or till the oil separates.
Add tomatoes and cook for 5 minutes. Add salt.
Finally add the potatoes and brinjals. Add some water and cook on steam until done.
Garnish with coriander leaves.
