Almond Chicken Recipe
If you crave for rich and creamy chicken gravy this is the recipe for you. The almonds and cashewnuts with milk bring out that sweetened texture in the dish which we generally get to taste in restaurant dishes.
I always wondered what can be the recipe for such creamy texture and trust me it wasn’t that difficult. The smoky broiled chicken in almond chicken gives it immense flavor. Almond chicken goes well with naan, pulav, chapathi or roti.
Almond Chicken Recipe
Ingredients
For marinating chicken
1 lb chicken (thigh pieces)
½ cup yoghurt
2 tbsp ginger garlic paste
2 tbsp tandoori masala
1 tsp food colour
2 tbsp red chilli powder
1 tbsp cumin powder
Salt to taste
For gravy
2 big onions chopped
2 tomatoes chopped
6 green chillies
5 tbsp yoghurt
1 tbsp oil
2 tbsp butter
1 tbsp black cumin seeds
1 tbsp ginger and garlic paste
1tsp chilli powder
2tsp coriander powder
5 green cardamom
5 cloves
1 black cardamom
1 cinnamon stick
10 almonds
6 cashwenuts
1 cup milk
1 tsp garam masala
1 tsp kasoori meethi powder
2 tbsp tandoori masala
5-8 almonds sliced
salt as per taste
Method
Marinate the chicken with yoghurt, ginger garlic paste, cumin powder, tandoori masala, red chilli powder and salt. Let it rest for one hr.
Broil it in oven till it is 90 percent cooked.
Remove it from oven and keep it aside.
Soak the almonds and cashew in milk for 30 mins. Later make a paste out of it.
Heat oil and butter in a pan.
Add black cumin seeds, cloves, green cardamom and black cardamom. Stir it for a minute.
Now add chopped onions and ginger garlic paste. Sautee it well till the onions are translucent.
Add coriander powder, red chilli powder, garam masala and tandoori masala. Let it cook for 10 minutes.
Grind tomatoes and green chillies and add in the pan.
Let it cook till oil separates.
Now mix in yoghurt. Stir well.
Now add almond cashew paste, salt and kasuri methi.
Add water, cover and let it cook for 15 minutes. Keep on stirring at regular intervals.
Finally add broiled chicken pieces and mix everything well. Cook for 10 minutes.
Garnish with sliced almonds and chopped coriander leaves
