Instant Palak Soup Recipe
Simple and instant palak soup made from spinach and onions. My mom is here and currently I am getting pampered with all sorts of soups, appetizers, lunches, dinners and desserts.
I wonder how will I survive once she goes back to Mumbai 🙁
I remember not liking any green veggies back in India. Today without cribbing I try to eat all of them. I think soups are the best way to consume veggies if you do not like them to eat as a vegetable
Ingredients
1 bunch of spinach
3 tomatoes
1 small onion
2 tablespoon butter
1/2 cup cream
pepper and salt as per taste
Method
Wash and chop the spinach leaves fine
Finely chop the onions and tomato
In a big vessel, add butter and onions. Sauté till onions turn soft
Now add tomato and spinach in it with 3-4 cups of water. Let them boil for 15 minutes
Add the entire mixture to the grinder and make puree
Now strain the puree
Add some water to the strained puree and boil for 10-15 min
Finally add salt and pepper
At the last add the cream and serve hot
I too love soups, so filling healthy and what the whole family needs on a cold winters day. Great post I will defiantly be trying some!

this looks so delicious! My husband hates eggs, so I never make Frittata’s which is a shame. Have you tried freezing this or something similar. I’m thinking for my breakfast or lunch, I could make ahead. Let me know, much appreciated!
