Tiramisu Recipe
Tiramisu from the Italian language, spelled tiramisù, meaning “pick me up” or “cheer me up” is a coffee-flavoured Italian dessert. It is made of ladyfingers (savoiardi) dipped in coffee, layered with a whipped mixture of eggs, sugar and mascarpone cheese, flavoured with cocoa. The recipe has been adapted into many varieties of cakes and other desserts.
I have been wanting to make Tiramisu since a long time. Thought it would be a tough cookie to crack. When I looked up the recipe it seemed pretty straight forward.
Currently I am in Baroda,India and it was difficult to find mascarpone cheese and ladyfingers. So decided to make these 2 key ingredients of Tiramisu at home.
For ladyfingers ( Makes around 30 ladyfingers)
Ingredients
3 egg whites
2 egg yolks
1/2 cup plus 2 tbsp granulated sugar
1 1/8 cup all purpose flour
1 tbsp cornstarch
1 tsp baking powder
3 tbsp granulated sugar for sprinkling
Method
In a bowl sieve the flour, cornstarch and baking powder
Beat the egg yolks until creamy with half the amount of sugar
Whip the egg whites until stiff peaks are found with remaining sugar
Fold the egg yolks mixture with whipped egg whites gently
Now fold the flour mixture gently in the egg mixture
Fill the mixture in a piping bag and pipe 10 inch cigars in a baking tray
Sprinkle granulated sugar on top of the cookies. Let them sit for 5 minutes and sprinkle sugar one more time.
Bake at 180 degrees in a preheated oven for 15 mins
Once done store in an airtight container
For mascarpone cheese (Makes around 1 cup mascarpone cheese)
Ingredients
2 cups amul cream
2 tbsp lemon juice
Method
In a pan, heat amul cream until in boils. Stir continuously
Add the lemon juice and boil for 10 minutes. Stir all the while. It will thicken
Take a big bowl. Place a strainer on it. Spread a muslin cloth on the strainer and strain the cream mixture on top of it
After 5 minutes tie together the muslin cloth and refrigerate in the freeze overnight
Next day the mascarpone cheese will be ready
For Tiramisu (Makes around 9 big pieces)
Ingredients
1.5 cup heavy whipping cream ( I used rich gold brand which is available in india)
1/2 cup sugar
30 lady fingers
1 cup mascarpone cheese
1.5 cup water
3 tbsp instant coffee
4 tbsp kahlua liquor (optional)
3 tbsp cocoa powder for sprinkling
Method
Whip the heavy cream with sugar until stiff peaks are formed
Add mascarpone cheese and whip one more time.
In a flat dish heat the water and add coffee. Let the coffee dissolve. Once the mixture is cooled add kailua liquor. You can skip this part if you want non alcoholic kahlua
Take a square glass or aluminium dish
Add some coffee mixture at the bottom
Now dip every ladyfinger in coffee mixture and place besides each other.
Pour some more coffee liquid on top of it
Spread the cream mixture on the ladyfingers and cover well
Repeat the above step one more time.
Sprinkle gracious amount of cocoa powder on the cream and refrigerate tiramisu for min 8 hrs and max 24 hrs
Serve chilled 🙂
