Bhakarwadi-Diwali Delicacy
Bhakarwadi is a delightfully crisp, irresistible crunchy snack is made with gram flour, all purpose flour, chili, cumin, coriander and other spices. Its unmatched taste will add zest to your tea time, coffee breaks, after meal munches and parties. And not to forget it’s one of the best Diwali delicacies I made so far.
Ingredients
3/4 cup besan (chickpea flour)
1/4 cup all purpose flour
2 tbsp oil
1/4 tsp red chilli powder
1/4 tsp turmeric powder
for stuffing
1/2 cup dry coconut flakes
2 tbsp sesame seeds
2 tbsp poppy seeds
coriander powder
turmeric powder
asafetida
1/4 cup thin sev
1 tbsp garam masala
1/4 tsp red chilli powder
1/4 tsp sugar
1/4 tsp ginger garlic paste
1/2 tsp lemon juice
fennel seeds
sugar
Tamarind paste for spreading on the rotis
Salt to taste
Method
Method
Take all ingredients for dough in a mixing bowl except water.Rub everything with your hands..
Pour in water and make into a soft dough.Apply some oil on top and let it rest for 30 mins.
Now make stuffing by dry roasting coconut, poppy seeds, sesame seeds till it gets nice aroma and colour.
Switch off the flame and add remaining dry ingredients.
Remove this in a bowl and allow it to cool down.
Now take the dough and divide into equal portions. Mean time divide the filling into equal portions.
Take one dough and roll into thin circle. Rub some tamarind paste over the top generously.
Take a good amount of filling and spread on top. Press with your hands firmly so that the filling sticks to the dough.
Now start rolling from one side. Roll firmly and tightly.
Now cut into equal portions and set aside.
Heat oil to a medium heat…Please don’t fry this in high heat.
Drop this bhakarwadi in the oil and fry on a low flame till golden brown.It will take around 10-15 mins.
Remove and drain in a paper towel.
Serve hot with chai or store the cooled bhakarwadis in an air tight container.
