Barbecue Recipes
Grilled Prawns, Paneer Tikka, Watermelon Skewers, Smoked salmon, juicy chicken and crunch veggies was the menu for the BBQ. The weather was great and no fuss, simple marinades were at their best. Everything I marinated for just less than 30 minutes as the plan for impromptu. It turned out to be awesome 🙂
Grilled Shrimp
Grind coriander leaves, mint leaves, ginger, garlic, green chillies, kauri methi, salt and curry leaves.
In a bowl place shrimp and add the above mixture. Now add some hung yoghurt, turmeric powder and cumin powder. Mix well and marinate for 2-3 hrs.
Thread the shrimp onto each skewer.
At 425 degrees grill shrimp for 15 mins each side. Serve it hot with coriander mint chutney
Grilled Paneer
In a bowl add some yoghurt, tandoori masala, carom seeds, oil, red chilli powder, kasuri methi and salt. Mix it well.
Add the paneer and chopped capsicum to the mixture and marinate for 2-3 hrs.
In an oven safe plate, sprinkle pam or oil and place paneer. Sprinkle some cheese on top.
At 425 degrees grill paneer for 15 mins each side.
Broil it for 5 mins for the smoky flavor
Serve it hot with coriander mint chutney.
Watermelon & Cheese Skewers
Cut watermelon and cheese into small cubes. In mini skewer add the one cube of watermelon, then cheese followed by another cube of watermelon. Chill it and serve.
Grilled Salmon
In a silver foil, place a piece of salmon and sprinkle some lemon, salt, and pepper over it. Wrap it up and let it marinate for 30 minutes. After 30 minutes remove it from the silver foil and place it on the grill. Grill it until it becomes dark pink in color.
Grilled Chicken
In a bowl add yogurt, turmeric, garam masala, tandoori masala, chicken and salt. Keep it aside for 30 minutes. Grill it till the meat become tender. Serve it with some salad.
Veggies
I mixed all the veggies with some creole seasoning and salt. They tasted amazing after grilling especially the peppers.
Potatoes
Grill them and sprinkle some chat masala while eating.
Corn
Here comes my favorite. Spray some butter on them and grill till they are nicely roasted. Remove once done and add some lime juice and salt before eating.
Green Chutney
In a grinder add onion, lemon juice, cumin seeds, salt, coriander leaves, mint leaves, green chillies and yoghurt. Grind it till smooth.
And Of course.. how can i forget chilled beer..CHEERS:)
