Aloo Gobi Matar Recipe
The good old Aloo Gobi Matar is a simple indian vegetable made from potatoes, cauliflower and peas sautéed with indian spices. It goes well with hot rotis or phulkas. It is a famous dish among North Indians but eaten all over India and is considered as soul food.

Ingredients
3 tbsp oil
1 tsp mustard seeds
1/2 tsp fenugreek (methi) seeds
1 small cauliflower
3/4 cup green peas
2 boiled potatoes
1 tsp turmeric powder (haldi)
1 tsp chilli powder
1/2 tsp coriander (dhania) powder
1 chopped tomato
salt to taste
1 tbsp sugar
For The Garnish
2 tbsp chopped coriander (dhania)
Method
Heat the oil in a kadhai and add the mustard seeds.
When they splutter add the fenugreek seeds and saute for a minute.
Add the cauliflower florets, peas and fry for few minutes stirring occasionally.
Add the medium sized potato pieces, turmeric powder, chilli powder, coriander seed powder and mix well.
Cover it with a tight fitting lid and cook on a low flame for 5 – 7 minutes. Or till the cauliflower is soft.
Add the tomatoes, salt and sugar and cook for 5 more minutes.
Serve hot and garnish with coriander.
