Vegetarian Pulao & Pickle Platter Recipe
Vegetarian Pulao and the lipsmacking pickle platter was my dinner last night. My mother in law loves to make interesting dishes and we are lucky that we get taste such variety everyday. She made this amazing pulao at a blink of an eye and to accompany it she made not one or two but 4 pickles π
The vegetarian pulao was a perfect dinner recipe with goodness of veggies and unique flavor of burnt garlic. Lemon pickle, Green Chillies pickle, Garlic Pickle and Turmeric Root pickle were the part of my pickle platter π
Veg Pulao Recipe
Ingredients
3 cups cooked basmati rice
1 cup chopped vegetables (corn, peas, carrot, beans, etc)
4 pods of garlic chopped
pinch of asafetida
4 chillies chopped
2 tbsp ginger thinly sliced
2 tbsp coriander chopped
salt as per taste

Method
Heat oil. Add garlic. Sautee till pink
Add green chillies, ginger and asafetida.
Add all veggies and sautee for 5 mins.
Add rice, salt and coriander and mix for 5 minutes
Pickle Platters
Lemon pickle
Ingredients
6 lemons-each lemon sliced into 8 parts
1/2 cup oil
1 tsp mustard seeds
1/4 cup mustard seeds powder
1/4 fenugreek seeds powder
1/4 cup red chilli powder
1/4 cup salt
1 tbsp turmeric
1 tsp hing
Method
Heat oil, add mustard seeds. let them splutter
Add asfetida. Switch off the gas.
Now add mustard seeds powder and fenugreek seeds powder and mix well.
Finally add turmeric, red chilli powder and salt
Let the mixture cool down for an hour
Add lemon and mix everything well. Transfer to a jar and let it marinate for 3 days
It is ready to eat after 3 days
Green chillies pickle
Ingredients
4 cup green chillies, slit in middle
1/4 cup salt
1/4 mustard seeds powder
Juice from 2 lemons
2 tbsp mustard seeds
2 tsp turmeric powder
1 tsp asafetida powder
1 cup oil
Method
Heat oil.
Add mustard seeds and asafetida.
Remove it from gas.
Add mustard seeds powder and salt. Mix well.
Now add turmeric and mix.
Once the mixture cools down, add lemon juice and green chillies.
Transfer to a jar to marinate. Eat after 3 day
Garlic Pickle
Ingredients
1/2 cup garlic pods chopped finely
1/2 cup ginger chopped finely
1/2 cup chillies chopped finely
1 turmeric roots chopped finely
1/3 cup mustard seeds powder
Juice from one lemon
2-3 tbsp salt
Method
Mix all the mentioned above ingredients together and marinate for 3 days.
Transfer to a jar and eat after 2 days.
Turmeric Pickle
Ingredients
4-5 turmeric roots
juice from 2 lemons
salt as per taste
Method
Peel the skin of the turmeric roots and wash properly
Chop into thin slices
Add lemon juice and salt
Transfer to a jar to marinate. Eat after 3 days
