Mango Cake Recipe
Mango Cake made with simple vanilla sponge filled with mango puree and cream and decorated with fresh mango slices. It came out to be super soft and moist. Made this cake for Ritesh’s Birthday and it was a hit.
Ingredients
For Vanilla Cake
1 cup maida/all purpose flour
1 tsp baking powder
1/4 tsp salt
4 eggs
1 cup sugar
1/2 cup oil
1 tsp vanilla essence
For filling
1 cup fresh cream
1/4 cup castor sugar
1 cup mango puree
Decoration
Freshly sliced mango
Method
Preheat cooker
Grease a baking tin with oil
Sieve all purpose flour, baking powder and salt together. Keep it aside
In a bowl beat eggs for 2 mins
Add sugar and beat until the mixture turns fluffy and light yellow in color.
Now add half of all purpose flour mixture and beat once
Add remaining flour and beat again.
Add oil and vanilla essence and beat one last time.
Transfer to the baking tin and bake on low gas for an hour.
To make it in oven. Bake in preheated oven at 180 degrees for 40 mins
After an hour remove the cake from the tin and let it cool completely.
With a blender whip the fresh cream with sugar. Add mango puree and whip again.
Slice the cake in equal portions horizontally.
Spread the mango cream in between each layer. Refrigerate overnight.
Next day before serving add the cream on the top and around the cake. Decorate with mango slices.
