Aamras Puri Recipe
Aamras Puri is a popular dessert all over India. Aamras literally means pulp or juice of mango. Puri is a deep fried flatbread made from whole wheat flour. The combination of chilled aamras with hot puris is out of the world.
Aamras is a popular dessert in Rajasthani cuisine and Marwari, Maharashtra, Gujrati homes, especially during festivals. The pulp of a mango is extracted usually by hand or nowadays in blender and consumed along with chapati or puri. At times ghee and milk are added to the pulp to enhance its flavor. Now sugar is also added to adjust the sweetness.
I love the aamras from alphonso mangoes. It tastes so pure and rich. Now it is summer and aamras puri is a regular in our household as alphonso mangoes are only available during summer.

Ingredients
4 ripe alphonso mangoes
1 cup water
2 tbsp sugar
a pinch of salt
Method
Wash the mangoes well under running water
Now, with the help of fingers press the mangoes gently to loosen the pulp.
Take off the tip and squeeze out the pulp in a clean bowl.
Next, after squeezing them, peel it and extract the mango pulp completely. After this, if you find any lump, just take the whisker and whisk it well.
Collect the seed and skin of the mango in another bowl
Add water to the bowl which has seeds and skin and extract more mango pulp.
Add pulp to the main bowl. Add sugar and pinch of salt to the pulp. Mix well

Puri Recipe
Ingredients
1 cup whole wheat flour
1 tablespoon sooji / semolina
1/8 teaspoon carom seeds
1/2 teaspoon salt
1 cup water
oil for frying
Method
Mix together all the ingredients mentioned above except oil for frying
Make a firm dough
Dough should be hard and not smooth
Let the dough rest for 15 mins under a damp cloth
Now make equal parts of the dough
Brush some oil on the dough balls
Roll the dough into about 5-inch diameter. If the dough is sticking to the rolling pin or rolling surface, put couple of drops of oil on the rolling pin and a couple of drops of oil on the surface.
Roll around 4-5 puris at one time.
Heat the oil in a pan.
Place the puri in the frying pan and press it with a skimmer, puri should puff right away.
