Vegetable Kebabs & Orange Paradise Recipe
Interesting Vegetable kebabs are made from veggies and indian spices complimented with orange paradise which is fruity healthy delight.
Cancer Institute Foundation (CIF) organized the Kitchen Khiladi Contest 2013 which was a huge success with participants from all over the bay area, esteemed judges, CIF volunteers and amazing audience.

Below mentioned is the recipe for tasty Vegetable Kebabs & Orange Paradise by Niranjani Raya and Prajna Nayak. This recipe bagged the 3rd prize at the contest
Dice all the vegetables and shallow fry them in 1 teaspoon oil except mustard green. Finely chop mustard greens and keep them aside. After frying all vegetables for 3 to 4 minutes. Remove and add mustard greens and use the powdered oats for binding. Add salt,ginger powder,turmeric,amchur powder. Shape them like kebabs and grease a bake dish and place them on the dish. In a preheated oven bake it at 400F for 30 minutes. Serve them with Yogurt and mint sauce.
Zest of orange
1 tablespoon mango puree
Cut the pear into pieces. And rub lemon juice to avoid discoloration. Set it in a baking dish.
Mix the juice of oranges with and mango puree and spread it over the pears. Sprinkle the orange zes,Cinnamon and pistachios and bake for 30 minutes.
