Vadodara Mahakali Sev Usal Recipe
Sev Usal is medley of various sweet, spicy and tangy flavors which is made from peas, indian spices and garnished with sev.
I had the best sev usal in Vadodara at Mahakali Sev Usal. The below pics are taken there. Mahakali Sev Usal is the must visit food stall in Vadodara for all outsiders and Barodians. Located near pologround started 25 years back by two brothers is now staple food for this city. Serving more than 25 delicious variety of Sev usal pulls large numbers of students to them.
This famous Sev Usal is served with tari ( spicy gravy), chopped onions, buns and lemon juice.
My Mother In Law is here and she made this tonight. Here is her recipe.
1 cup white vatana peas
1/2 cup oil
Salt as per taste
To grind into paste:
1 onion chopped
1 inch ginger
2 tbsp garam masala powder
2 tbsp cumin and coriander powder
1 tbsp red chilli powder
1 cup coriander – chopped
1/2 cup onions/spring onions – chopped
2 cups thick Sev (you can find it easily at an Indian store)
Red Garlic chutney – to taste
Green Coriander chutney – to taste
Soak the white peas in water overnight or at least for 4-5 hours. Then pressure cook them upto 3-4 whistles so they are well-cooked, almost mashed.
Make a paste of all the ingredients mentioned under to grind into a paste. Add some water while making a paste.
In the pan, heat oil
Add the ground paste and sauté for 15 minutes or until the oil leaves mixture.
Now add the white peas along with the boiled water.
Add salt and let it boil on low flame for 20 mins.
Now take the gravy in a bowl or plate, add some sev on the top to add the crunch, and top it off with chopped onions and coriander. Serve hot with bread pieces sautéed in ghee or butter
