Puran Poli is a traditional type of sweet flatbread made in India in the states of Maharashtra, Gujarat, and Goa. The stuffing is known as puran and the outer cover is known as poli. The puran is made by boiling chickpea lentils with a pinch of turmeric for color and the poli is made from wheat flour dough.
It is a classical Marathi dish, which is a dessert served during auspicious occasions and during important festivals such as Holi, Padwa, Ganesh utsav in Maharashtra. Although it resembles like a roti, a poli is actually very different. It is made mostly during holi when the bonfire is lit. To make Poli2 cups Wheat Flour1 cup Whole Purpose Flour2 tbsp ghee1 cup waterpinch of salt
To make Puran2 cups Chana dal2 cups grated jaggery1 tsp cardamom powder1 tsp nutmeg powder
To make PoliIn a bowl mix wheat flour, whole purpose flour, ghee, water and salt. Knead into soft dough. Seal wrap it and keep it aside for 15 mins.
To make PuranWash and boil chana dal in pretty of water till softenStrain the cooked chana dal and reserve the water for making Katachi Amti.Now grind the chana dal in mixer or with the help of masher.Add the mashed chana dal and jaggery in a pan and let it cook slowly.Add cardamom and nutmeg powder.Stir continuously till the mixture becomes thick.Now the stuffing for Puran Poli is ready. Keep it aside
To make Puran PoliTake a medium sized ball out of dough and cover with dry whole purpose flour.Roll the ball into round shaped puri.Place the ball of puran over the puri.Gather all the edges and seal the puran with puri.Again dust the dry whole purpose flour over sealed puran and roll it into a poliHeat the pan. Place the Puran Poli over it.Once bubbles start coming on the outer side of Puran poli, flip it.Add ghee and flip to other side. Roast it well till brown spots appear on both sides.Puran Poli Is ready. Serve it hot with ghee and milk.
