Mango Chia Pudding Recipe – Akshaya Tritiya Special
Mango Chia Pudding is my favorite breakfast recipe which takes less than 10 minutes to prepare with just 4 ingredients. Today is Akshaya Tritiya, a Hindu festival.According to Hinduism, on Akshaya Tritiya, Lord Ganesha and Veda Vyas started writing Mahabharata. Eating mangoes is considered to be auspicious on this occasion . So this is my way to celebrate it 🙂
I was reading about Paleo diet and i came across chia seed recipes.
The Paleo Diet is an effort to eat like we used to eat back in the day…WAY back in the day. If a caveman couldn’t eat it, neither can you.
This means you can eat anything we could hunt or gather – meats, fish, nuts, leafy greens, regional veggies, and seeds. Sorry, the pasta, cereal, and candy will have to go! Instead of pasta, you’ll be making things like paleo spaghetti, chicken stir fry, or paleo tacos. Read more about it here
This chia seed pudding is a great combination of healthy fats, fiber, and protein all aimed at helping your body balance blood sugars even more.
- 4 tablespoons chia seed.
- 2 cups almond milk.
- ½ cup canned coconut milk.
- 1 whole mango, diced.
Mix almond milk, coconut milk and chia seeds. Let the chia seeds soak overnight in the milk.
Pour the chia mixture in the serving glass and top it up with chopped mango.
