It’s summer and it’s grilling time. One of my favorite things to make on an outdoor grill is grilled prawns or jumbo shrimp.
Prawns are delicious when grilled. Marinating with sesame seeds gives a crunchy layer to prawns which make them unbeatable.
I like grilling seafood because they are quick to cook and not to mention, also takes less time to marinate. Seafood generally tastes great by itself. So, a simple marinate should suffice.
Total calories in 24 prawns will be 124.

 

Grilled Prawns Recipe

24 large shrimp
1 ½ tsp salt
2 tsp lime juice
10 tbsp yoghurt
2 tbsp ginger garlic paste
20 tbsp plain yogurt
2 tsp red chilli powder
3 tsp paprika
1 tbsp ajwain/carom seeds, lightly toasted
2 tsp sesame seeds, lightly toasted
2 tsp garam masala
2 tsp and cumin powder
2 tsp coriander powder
1 tbsp toasted besan
10 tbsp vegetable oil
4 tbsp sesame oil
3 tbsp fresh lime juice
2 tbsp finely chopped mint leaves
6 tbsp butter–oil mixture for basting
Salt to taste
1 tsp chat masala, for garnish
1 tsp chopped coriander leaves, for garnish

Method

Soak 8 4-inch wooden skewers in cold water for about 1 hour.
Wash and devein prawns.
Apply salt and lime juice. Let them marinate for 30 minutes
In a bowl add yoghurt, ginger garlic, red chilli powder, paprika, carom seeds, sesame seeds, garam masala, coriander powder,  besan, vegetable, sesame oil, mint leaves and cumin powder.
Add the prawns in marinade and let it marinate for 2 hrs.
Thread the shrimp onto each skewer.
Heat your grill for high heat, direct grilling.
Grill the shrimp for about 2 minutes on each side (or until just cooked through).
Keep basting from time to time with butter-oil mixture.
Sprinkle with remaining lime juice, chat masala and coriander leaves.
Serve with seasonally appropriate salad.
