The Chapati Platter Recipes

Chapati or indian flat bread made from wheat is a very important part of meal in every Maharashtrian household. Chapatis are made using a soft dough comprising of atta flour (wheat flour), salt and water. It is made almost daily.

As they are made daily, many times there are chapati leftovers so this post is about the variety of dishes made from these leftovers. These all recipes were made by my Mother in Law who is visiting us now.

Here is some interesting fact about history of Chapati

The word chapat (Hindi:चपत, chapat) means “to slap”, which describes the traditional method of forming rounds of thin dough by slapping the dough between the wetted palms of the hands. With each slap, the round of dough is rotated. Chapati is noted in the 16th-century document Ain-i-Akbari by Abu’l-Fazl ibn Mubarak, vizier of Mughal Emperor Akbar

Chapatichi Bhaji

It’s a savory dish made from Chapati leftovers

Ingredients

3 leftover chapatis

2 tbsp oil

1 tsp mustard seeds

pinch of asafetida

2 tbsp chopped garlic

1 tsp turmeric powder

salt as per taste

1 tbsp coriander cumin powder

1 tbsp red chilli powder

chopped coriander leaves

Method

Slice the chapatis in diamond shape.

Heat oil, add mustard seeds, asafetida, garlic, red chilli powder, turmeric, coriander cumin and saute til garlic turns pinkish. Now add salt and water and let it simmer for once.

Now add sliced leftover chapatis and simmer it for 5 minutes.

Garnish with coriander leaves and serve it hot.

Chapticha Chura

It’s a sweet and savory dish made from Chapati leftovers

Ingredients

3 leftover chapatis

1 tsp turmeric powder

salt as per taste

1 tbsp coriander cumin powder

1 tbsp red chilli powder

1 tbsp sugar

2 tbsp oil

1 tsp mustard seeds

pinch of asafetida

1/2 tsp carom seeds

1 sesame seeds

chopped coriander leaves

Method

Grind the chapatis coarse in mixture. Add coriander cumin seeds powder, red chilli powder and sugar to the coarse chapatis and mix well

In a pan, heat oil and add mustard seeds, asafetida, carom seeds, sesame seed, sugar and salt.

Add the coarse chapati mixture and mix well. Sprinkle some water and let it cook for 5 minutes. Serve it hot.

Chapati Ladoo

It’s a sweet dish made from Chapati leftovers

Ingredients

3 leftover chapatis

2 tbsp ghee

1/4 cup sugar/jaggery

Method

Grind chapatis finely

Heat ghee, add sugar/jaggery and chapati mixture to it. Mix all ingredients well.

Bind them well and serve it hot.
