Brown Rice with French Beans and Fenugreek Vegetable Recipe
It’s a simple and healthy meal recipe with brown rice, french beans and fenugreek leaves which is high is proteins and low in calories. Brown rice is unmilled or partly milled rice, is a kind of whole, natural grain. It has a mild nutty flavor, and is chewier and more nutritious than white rice. Being a white rice lover, the thought of trying brown rice seemed difficult. But to my surprise it was not at all bad. I guess now brown rice is going to be regular on my menu:)The french beans and fenugreek leaves as we all know are calcium rich. I guess going green and being healthy is totally on my mind:)
Ingredients
1 cup brown rice2 cups French beans chopped1 cup fenugreek leaves chopped1 cup moong dal1 garlic chopped1 onion chopped1 green chilli chopped2-3 curry leaves1 tsp cumin seeds2 tbsp oil1 tbsp lime juice1 tsp ginger garlic paste1 tsp garam masala1 tsp turmeric1 tsp asafetidasalt as per taste
MethodCook brown rice and keep it aside.Cook moong dal and keep it aside.In a pan heat oil, add cumin seeds and asafetida.Now add chopped garlic, curry leaves, onion, ginger garlic paste and green chillies. Once the onions are translucent, add fenugreek leaves and French beans. Let it cook for 10 mins.Now add moong dal with some water.Add garam masala, turmeric, salt and lemon juice.Let the dal boil for 15 mins.Finally serve it hot with brown rice.
