Currently I am in Phoenix, Arizona spending time with my dear friend Divya.I landed here yesterday night and it was a surprise planned for her by me and her loving husband Shaji. I had to be here to celebrate her birthday and last month of her pregnancy:)
Divya is an awesome cook and she cooked for me the famous puttu with black vatana sambhar. It was sooo delicious that I had to ask her the recipe and click some mouthwatering pictures.
Puttu is a South Indian and Sri Lankan breakfast dish of steamed cylinders of ground rice layered with coconut. It is highly popular in the Indian states of Kerala and Tamil Nadu as well as in few areas of Sri Lanka, where it is also known as pittu. Puttu is served with side dishes such as chickpea curry or banana.
Puttu is generally cooked in a metal puttu kutti vessel with two sections. The lower section holds water and the upper section holds the puttu — where the rice mixture is inserted with layers of grated coconut. Perforated lids separate the sections to allow the steam to pass between them.A number of alternative cooking vessels are used, such as traditional vessels where a perforated coconut shell is attached to a section of bamboo, or a chiratta puttu made of a coconut shell or of metal shaped similarly to a coconut shell.
Further alternative cooking vessel include a pan similar to an idli pan with small holes in the bottom. I will share the detailed recipe of Puttu in my upcoming blog post. For now enjoy the black vatana sambhar recipe.
Ingredients1 cup black vatana2 inch ginger thinly sliced4-5 garlic minced5 green chillies slit1 onion chopped1 tomato chopped1 tbsp red chilli powder1 tsp turmeric powder1 cup coconut milk5 tbsp shredded coconut6 curry leavessaltMethodSoak black vatana in water overnight.Cook black vatana in pressure cooker with turmeric powder, ginger ,garlic, slit green chillies.Heat oil in pan
Add chopped onion. Sautee till it is translucent.Add red chilli powder and cook till oil separatesNow add vatana.Add coconut milk and shredded coconutAdd salt and curry leaves from top and close the lid .Let it cook for 15 minutesServe it hot with puttu and banana
