Everyone knows that green and leafy veggies are good for health. But not all of us are keen on eating them. Same was with me. I loved Palak (spinach) but there was always one condition that it has to be cooked with paneer ( cottage cheese). Basically I enjoyed eating only Palak Paneer (Cottage Cheese with Spinach). But not anymore. Now I make Palak recipes with various ingredients like matar (green peas), makai (corn) and aloo (potato). Aloo Palak recipe is one of the easiest Punjabi Cuisine which is easy to make, tasty and nutritious.
Aloo Palak contains only 115 calories and zero cholesterol. Spinach is best for dinner when you want to have something light and healthy! Spinach has high source of iron and calcium. Potatoes contains vital vitamins, minerals and is best known for its carbohydrate content.
Aloo Palak Recipe
Ingredients2 cups potatoes cubed6 cups chopped fresh spinach4 cloves garlic1 inch piece ginger2 onions chopped1 tomato chopped1 tbsp cumin1 tbsp cumin powder1 tbsp coriander powder1 tsp turmeric1 tsp asafetida1 tbsp chilli powder1 tsp garam masala2 tbsp oilGinger strips and 2 red chilliesSalt as per taste
MethodMake a paste of ginger garlic.Heat oil in a pan.Add asafetida, cumin seeds and turmeric powder.Now add chopped onions, cubed potatoes and ginger garlic paste. Sautee well.Add the cumin powder, coriander powder and chilli powder. Mix wellOnce the masala in cooked, add tomatoes. Let it cook for 5 minsSprinkle the water over the potatoes; cover the skillet with a lid and cook until the potatoes are cooked, but still firm, about 10 minutes.At the end add spinach, salt and garam masala. Cook for 10 minutes more.Garnish with ginger strips and slit red chillies. Aloo Palak is ready.Serve it hot with Rotis.
